I hate the cold weather; I always question my decision to move back to Sweden as autumn starts creeping in. The one good thing about the cold temperature; soup.
This onion soup is a family recipe that my mother passed on to me. When I first moved away from home, it was pretty much the only thing I could cook. It was cheap, fast and really really tasty!
6 yellow onions
2 – 3 cloves of garlic
10 cm leek
3 vegetable stock cubes
Salt and pepper
1 liter of water
Day old bread
Set your oven to 200 degrees.
Peel the onions, cut in half and slice. Wash the leek and slice. Peel the garlic, crush with your knife and cut into slices.
Gently fry the onion, leek and garlic in olive oil until they are shiny and getting softer. Add the vegetable stock cubes, salt and pepper, and pour over water. Bring to the boil and let simmer for a few minutes.
Toast the bread and cut into crutons.
Pour the soup into 4 oven safe bowls, top with the bread and then the cheese. Put in the oven for about 15 minutes or until the cheese has a nice brownish color.
Serve immediatley. Careful though, it’s very hot!
