A simple, yet delicious starter with a fantastic mix of sweet beets and salty feta cheese.
8 polka beets
1 pkt of fresh baby spinach
1 pkt of feta cheese
1 dl sour cream
½ dl cream
salt and pepper
Peel the beets and cut into equally sized pieces. Boil water with a pinch of salt and add the beets. Let boil for about 10 minutes, depending on the size of the beets. They should be soft but not mushy.
Fry the spinach in olive oil in a pan and season with salt and pepper. Add sour cream, cream and feta cheese, let simmer for a couple of minutes but be careful it doesn’t burn!
Arrange the beets on a plate and spoon over the spinach and feta sauce. Top with some lightly roasted pumpkin seeds and serve immediatley.
