Creamy #comfortfood Gnocchi

You know when it’s freezing outside? You’ve worked a whole day that seemed endless and you can hardly keep your eyes open and all you want it so lay on the couch and disapear into some meaningless show. The last thing you want to do is spend hours slaving in the kitchen as well..!

How about 15 minutes in the kitchen then? The thing that takes the longest in this recipe is to boil the water and in true comfort food fashion, it’s heavenly creamy, probably not that healthy but utterly delicious!!

4 portions
2 packets of fresh potato gnocchi
200 g green olives with pimento
150 g cherry tomatoes
2 hands of fresh baby spinach
1 – 2 cloves of garlic
Freshly squeezed lemon juice from ½ lemon
2 dl sour cream
Salt and pepper
Olive oil

Bring lightly salted water to the boil in a large casserole, add the gnocchi and simmer until the gnocchi floats to the surface.
Slice the olives, finely chop the garlic and cut the cherry tomatoes in half. Wash the spinach and squeeze the lemon juice.
Gently fry the garlic in olive oil in a large pan, add the spinach, cherry tomatoes and olives just when the gnocchi is starting to surface.
Use a slotted spoon to get the gnocchi out of the water and fry together with the other ingredients, add lemon, salt and pepper.
Add the sourcream and season with more salt, pepper and lemon as needed.
